Description
The present proposal aims to create new beverage formulations that combine can enhanced nutritional profile and improved bioactive properties, by integrating natural extracts obtained from endogenous aromatic and/or medicinal plants from the Barroso region, Portugal. The validation of beverage formulations will be assessed in several Tasks, encompassing different methodologies. For this purpose, bio-based beverages will be developed from endogenous Barroso plants, improving the sustainability of the original products, and providing an effort to reduce acquisition costs. It will be necessary to extract bioactive compounds, through green extraction techniques (e.g.: forced percolation, ultrasound- assisted extraction) which require less time, energy, and solvent, and consequently reduce cost for the industry. Moreover, it is intended to explore the potential of employing different medicinal plants as a valuable source of biobased compounds for beverage formulations. Outstanding, this proposal also aims to study the modulatory effects of bio- based-beverages on gut microbiota composition revealing the potential efficacy in maintaining a healthy digestive tract.| Period | 18 Jul 2024 |
