Description

National rice production is subject to seeing its current products considered undesirable to balanced and healthy diets in the quantities currently sold.

Growing concerns about food, health and well-being are the focus of a number of industries. The rice industry is no exception and it is already a concern to have rice with certain characteristics that are destined to the growing market segment concerned with the control of obesity and diabetes.

The objective of the project is the development of rice products with low glycemic index.

The achievement of this objective implies a performance throughout the chain, from the agricultural production to the primary and secondary transformations in the industry, to the consumer, in the nutrient and clinical aspect, as well as in the preferences and sensorial analysis.

The project will allow the company Ernesto Morgado to create a state-of-the-art integrated knowledge of new and exotic varieties of rice, starch, digestibility, nutritional value and sensorial implications that will only be possible by integrating a multidisciplinary team in the state of the art in different areas of knowledge relevant to the whole chain.
