Abstract

The present invention relates to the field of controlling post-harvest problems, in particular the problem of browning. The invention discloses a fruit protection treatment with an antioxidant coating comprising, as an active ingredient, strawberry tree leaves or branches (i.e. arbutusunedo l.) or extracts of apple by-products to prevent and reduce fruit browning. Browning is a post-harvest problem caused mainly by the oxidation of natural phenolic compounds present in the fruit into quinones by polyphenol oxidase (ppo) and peroxidase (pox). Control of this disorder can be improved by inhibiting the activity of these two enzymes. The antioxidant activity, phenolic compound content and inhibition of ppo and pox activity are explored below. The invention extends to the use of coatings with natural antioxidants useful in the prevention and treatment of browning. The active ingredients of the present invention are extracted from natural sources, are low cost, safe to use and have no identified side-effects.
