N2 - The present disclosure provides compositions that contain protocatechuic acid (PCA) and a food product, oil, compound for cosmetic use, or dietary supplement. Without being limited by mechanism, the disclosure provides methods of using the compositions described herein to increase the shelf life of a food product, oil, compound for cosmetic use, or dietary supplement by reducing, e.g., oxidation, lipid peroxidation, bacterial growth, and/or the rate of rancidity.
