Controlo de qualidade e implementação do referencial BRC numa indústria de preparados de fruta

Abstract

Safety and food quality are a general concern in the eyes of society as consumers are becoming more and more demanding and aware of the health effects of the food crises in recent years. Consequently, several normative references appeared with the objective of standardizing the food industries in relation to the requirements of food safety and quality, based on the principles of the HACCP methodology. The certification of companies is fundamental in a global, competitive and dynamic market, allowing the increase of trust by the consumers. The present work follows the implementation of the normative reference BRC Food Safety version 8 in the company Frulact, more concretely, in the 5ensesinfood and Frulact SA units. The needs of Frulact were surveyed and diagnosed against the referential guidelines. It addresses all the requirements of the benchmark where it clarifies the compliance or not by the company and the action plans outlined to fulfill the requirements. In parallel with the implementation of the benchmark, a number of tasks were also developed for the quality control of the company where it was possible to monitor the launching of new products for the 5ensesinfood unit and to intervene in all quality control activities, from processes, installations and final product. Any questions raised were correctly considered and approached in the sense of taking actions that would allow its resolution. At the end of the internship, it was possible to conclude that the company has an effective quality control that allows the products to be shipped in a safe, legal and reliable way while maintaining the excellence. Regarding the BRC benchmark, at the end of the internship it was not possible to complete its implementation. However, a lot of progress has been made over the course of the internship. The audit performed by an external trainer allowed to outline actions to be taken in the future so that the final certification is in September 2019.
