Abstract
This chapter shows how a consumer-led approach to product development can be employed in the design of new foods and beverages for the ageing. After a brief description of the underlying concepts and practices, a detailed picture is given of how this approach was used in the design of home meal replacements for senior households. The chapter also includes a comprehensive review of the main determinants of food preference and meal choice behaviour at a later age.
