Abstract

The present invention relates to the solid-liquid extraction of polyphenols from sour cherry stems and leaves and the evaluation of the antioxidant and antibacterial activity of the extracts obtained. It also includes the application of the extracts to the production of edible films with antimicrobial action on various microorganisms. The present invention also describes the solid-liquid polyphenol extraction steps, the identification of polyphenolic compounds and the evaluation of antioxidant and antibacterial activity.
