Abstract

The integration of generative AI into food science education marks a pivotal shift towards innovative teaching and research methodologies. Generative AI, with its capacity for data analysis and predictive modeling, promises to revolutionize the way students learn and researchers explore food science, technology and engineering. Despite its potential to personalize education and automate research, the deployment of AI technologies in educational frameworks presents challenges, including ethical dilemmas around data privacy, algorithmic bias, and equitable access to technology. Practical issues such as curriculum integration and resource allocation also pose significant hurdles, necessitating a collaborative approach to overcome. Nevertheless, case studies from leading institutions demonstrate AI's transformative impact, showcasing enhancements in teaching methodologies and research capabilities. As we look to the future, the integration of AI in food science education demands a responsible approach, prioritizing ethical considerations and ensuring inclusivity. “Feeding a Brave New World" underscores the dual nature of generative AI's impact on food science education – its capacity to drive innovation and the ethical challenges it presents. The academic and industry communities' collaborative efforts are crucial in leveraging AI's potential to advance food science education, preparing students for the evolving demands of the food industry and contributing to global food sustainability and safety.
