Abstract

The present disclosure relates to a method for extracting or separating proteins from melon fruit peels which comprises a precipitation, namely a biological precipitation, comprising at least 0.001 % (w/v) of a polysaccharide as a precipitant. The disclosure also relates to a protein extract obtained by the disclosed method, and to the use of said extract as a vegetable rennet, and/or anti-freeze solution. A rennet composition, and an anti-freeze composition comprising the protein extract are also disclosed, as well as a food product comprising said anti-freeze composition.
