Abstract

In vitro digestion models are widely used as an alternative to in vivo studies since they are faster, cheaper and less labour-intensive, and do not rise any ethical issues. Although several anatomical accurate digestion models with dynamic behaviour have been developed in the last years, there are still several challenges that can be identified. The present invention concerns the development of a modular dynamic in vitro gastric model with in situ analysis, using ultraviolet-visible-near infrared (UV-VIS-NIR) spectrometry to address these challenges. This model will be capable of replicating the physico-chemical conditions that occur along the human stomach regarding peristaltic contractions, as well as anatomical and physiological characteristics. The present model will allow to monitor in real-time the digestion process of food products, controlled release systems, bioactive compounds and drugs, thus being an important research, development and control tool for the food and pharmaceutical industries.
