Abstract

The present disclosure is related to the processes for obtaining starch and bioactive extracts with high antioxidant capacity and antimicrobial activity by microwave-assisted extraction from avocado residues (peel and seed). The phenolic extracts were shown to contain high antioxidant and antimicrobial activity, without cytotoxicity. The extracts can be used in applications with antimicrobial purposes against Listeria monocytogenes, Staphylococci aureus MSSA, Staphylococci aureus MRSA and Bacillus cereus or in applications with antioxidant purposes as a supplement in the food industry or in the cosmetic industry. Starch can be used in different applications from the food, pharmaceutical or cosmetic industry. The present invention also presents an innovation in the valorization of the by-product chain of the avocado processing industry, which is an agro-industrial waste with zero commercial value to date.
