Abstract

The present invention relates to a process for preparing a protein hydrolysate from goat offal. The product is obtained from the by-products of goat slaughter and can be used by the food and small animal feed industries, as it has various technological and sensory functional properties, with the potential to be incorporated into a wide range of food products.
