Abstract

goat's milk rennet cheese (isolated or mixed with cow's milk) matured. the present invention relates to a goat's milk rennet cheese (isolated or mixed with cow's milk) matured using lactic acid bacteria (lactococcus lactis subsp. cremoris and lactococcus lactis subsp. lactis.), not restricted to these strains and ingredients (lactic acid, rennet and calcium chloride). rennet cheese made from cow's, goat's and/or mixed matured milk has characteristics such as high nutritional value, uniform texture and excellent flavour provided by the maturing process. the preparation method can be carried out easily, has a low production cost and a high yield.
