Abstract

The present invention relates to new edible coatings for foods, preferably dairy products in particular cheeses, formulated from protein systems of dairy origin with the incorporation of different agents in order to obtain improved antimicrobial and permeability properties, compatible with food matrices, preferably dairy products in particular cheeses. The object of the present invention is an edible food coating comprising: a. A whey protein concentrate with a protein content of between 80 and 95%; b. A plasticizing agent; c. A neutral thickening agent.
