Abstract

In the rapidly evolving landscape of food science and technology education, the integration of generative AI tools has emerged as a transformative force, reshaping pedagogical approaches and research methodologies. To capture the breadth of this transformation, a survey has been designed to gauge the utilization, frequency, and perception of generative AI tools among both students and professors within the field. The survey aims to uncover how these stakeholders are navigating the inclusion of AI technologies in their learning and teaching experiences, highlighting the diverse applications and potential challenges encountered. The intended research will systematically examine the variations in usage patterns between students and professors, offering insights into the educational and practical implications of generative AI tools in food science and technology. Additionally, the survey seeks to explore the attitudes and perceptions of these two groups towards AI, aiming to identify any disparities in acceptance or skepticism that may influence future curricular developments and technological adoption.
By gathering and analyzing data from both academic and student populations, the survey will provide a nuanced understanding of the current state and future directions of AI integration in food science education. The findings are expected to inform the development of more effective, responsive, and inclusive educational strategies that leverage AI to enhance learning outcomes, foster innovation, and prepare students for a future where AI plays a pivotal role in the food science industry.
