Abstract

This work arose from a desire to give back to the Portuguese culture a part of their story in their own language because the menus are written in the French court in the late nineteenth century. Similarly, the culinary richness of language used in the construction of menus, with all its specificities of time and gastronomic culture of the nineteenth century, was an element of choice especially motivating this work. Noteworthy is the aspect of reversion to an all Portuguese cultural habitus however disappeared. Thus, the source texts are written in the French language, French is the time to "langue reine des menus historiques"3 in European aristocracy. It comes to our mind the following question: "Why do the menus of the Portuguese court were drafted in a language other than the vernacular?" As mentioned Jean-Pierre Poulain4, a French cuisine had this ability to impose as a model the elites of other cultural spaces. It is interesting to note the reason for my choice, is not only a work of translation itself but also the clarification of a whole that transcends cultural part on menus. The menu can be interpreted as a testimony of court life, a cultural, social and political testimony, this time, as an important artistic testimony due to his own aesthetic, an integral part of our collective memory. The story of the menu is far more complex than it might seem. This object placed on the table that is the menu - the invention of the nineteenth century with the passing of "service à la française" to "service à la russe". First contact and early indicator of gastronomic pleasures followed, is a key instrument in the study of culinary history and its evolution, label and social relations in a given timeframe.
