Abstract

The concern with hygiene and food safety is a crucial aspect in catering services for school canteens, in compliance with the applicable regulations. The intent of this study has been the assessment of the hygiene and food safety conditions in the canteens of the 1st cycle-with-kindergarten basic schools from the municipality of Maia, whose catering services are hold by a concessioner, i.e. an enterprise which operates in the catering and food business. We have visited 26 school canteens: 15 of these canteens prepared their own meals, while the other 11 just received and served them. To collect the data we have used two different checklists: one to be applied to the canteens that just received the meals, the other one to the canteens which prepared their meals. Both checklists were also completed with observational study. The data were collected during the months of April, May, and June of 2013. From the sample of that total of 26 assessed canteens – 57,7% referring to canteens which prepared their meals and 42,3% to canteens which just received them – we could observe that some prerequisites were not being fulfilled and disagreed with the applicable regulations contained in the Regulation (EC) No 852/2004 of the European Parliament and of the Council, of April 29th; those data were also compared with previous studies by other authors. We were able to observe that the average percentage of nonconformities in the different areas was higher within the group of schools with old facilities than within the group of schools with modern or recently restored facilities, either in the canteens which just received the meals or in those ones which prepared their meals. This study made it possible to conclude for the non-compliance of some mandatory prerequisites that can be found in the referred Regulation (EC) No 852/2004 of the European Parliament and of the Council, of April 29th
