In a society increasingly demanding for quality, the food sector is no exception. The parameters connected to food safety become more restrict and demanding, being easily perceived by the final consumer.The main goals of this report were to analyze and interpret the procedures implemented within the subject of Food Hygiene and Safety at a Sonae store and their implementation in its various sections, as well as, the development of new tools to facilitate the whole operation at the store.In this work, initially the themes of Food Hygiene and Safety and the consumers’ behavior are discussed and a description of the place where the procedures will be implemented is given. After, the auto-control mechanisms applied in the different areas of the store are described. The reevaluation of the good Food Hygiene and Safety practices used in Sonae stores has allowed the improvement and development of new work tools, being of great relevance for the company the evolution and continuous improvement.
