Conceção e desenvolvimento de um protótipo flow quality para a desmaterialização do sistema de gestão da qualidade e segurança alimentar

Abstract

The food sector is constantly evolving and, given the efferent levels of competitiveness it faces, the result of establishing a transparent, effective, and flexible production, quality, and food safety control, leads to long-term strategies oriented in terms of Quality and Food Safety Management Systems. Due to rapid technological evolution, Digital Transformation is in the order of the day and, the opportunity to implement technologies to analyze a large volume of stored data and obtain relevant information represents new challenges and opportunities for the sector. The objective of this internship report is focused on the conception and delineation of a prototype FLOW Quality (FLOW Q) from the Foodintech portfolio of technologies to study the implementation of quality and food safety management system capable of responding to the needs in terms of quality and food safety information in the Horeca channel, corresponding to the actuation of the sectors: Hotel, Restaurant, Cafeteria and Catering sectors, in a path leading to continuous improvement. The FLOW Q technology, represented in the Quality Execution System (QES) language, enables the management of all quality and food safety systems, such as HACCP, allows automatic, paper-free execution, in real-time, the management and control of quality and food safety of products and processes, providing increased productivity and efficiency and helping in decision-making. To carry out this characterization was studied the Codex Alimentarius 2020 new actualization and, a checklist was structured to delineate a FLOW Q technology prototype, applied to a real company that constitutes the case study, corresponding to the application of the FLOW Q technology in a business customer in the Horeca channel. It describes a cafeteria, bakery and meals group that showed the interest to find a technological, paper-free, quality and food safety management solution. Ultimately, it was compared with modules of the FLOW M technology features and presented advantages and limitations. The FLOW Q technology implementation provides benefits to food companies, proving to be an agile tool, which enables quick decision-making, reduction of production costs, quality control of products and production, monitoring and verification of information.
