Abstract

This report focuses on the description of the activities carried out during the internship within the scope of the Master's Degree in Biotechnology and Innovation, which took place in a business environment in the area of food innovation at Diverge – Grupo Nabeiro Innovation Center, whose realm falls within the “Development of soluble beverages with an impact on health”, an innovative product for the Portuguese market. Throughout the internship, 11 projects were developed for the most different brands of the Nabeiro Group namely: Delta Cafés, Delta Q and “Mais Marcas”. The work that was developed included the projects: Optimization of packaging for kilo bean coffee, ground decaffeinated coffee and roasted coffee with the aim of reducing packaging waste; Café Amigo do Coração, Project with the aim of designing a blend that contributes to the cardiac system; Nutriscore, in which there was an adaptation of Novadelta products; Product Information Management, where we updated product information; Ruby Project, with the aim of updating the range and become sustainable; Delta Q – Qids, with the development of 2 products aimed at children; Delta Q – Flavors, with a formulation of 111 prototypes with different aromas; Delta Q Brix Degree Measurement (analytical project), Delta Q – Sweet, with the aim of formulating a blend with sweetness without sugar; Delta Mind Lab (Nabeiro Group's Internal Innovation Program) and Health Concerns, development of formulations that can have a positive contribution to consumer´s health. Currently, the product development area functions as a driving force for the evolution of food companies. The constant changes in eating habits and increased concern about a healthier lifestyle are trends that influence the consumer when purchasing products. In this way, a market study was carried out, through an online survey with a total of 71 participants, aged between 18 and 65 years old, as a way of assessing the public's interest in soluble functional products. Therefore, to understand the possible consumer interest in the product, we divided the questionnaire into 2 parts. The first part, after the request for consent to data collection, contained questions about the consumption pattern of health supplements and the second part about sociodemographic data. In data analysis, a descriptive analysis was carried out, through frequency examination. Data analysis demonstrated that 86,6% of the public was very receptive to consuming this type of drink, with immune functionality being the most selected with 71,6%. The projects developed allowed the company to present greater process optimization and market competitiveness.
