Abstract
Food safety represents a central challenge in an increasingly globalized market, characterized by supply chains that are ever more demanding and complex. Within the scope of the internship carried out at Prozis, developed at the Prozis.Now unit, the project aimed to address the requirements of the Food Safety Modernization Act (FSMA), with a particular focus on the Hazard Analysis and Risk-Based Preventive Controls (HARPC) methodology. This work combined analytical and practical components, resulting in the development of a plan that encompasses hazard analysis, the definition of risk controls, traceability, sanitation, supply chain management, and recall plans. In addition to ensuring legal compliance, the internship contributed to the development of technical and operational skills in the field of food safety, reinforcing the understanding of the importance of preventive systems in complex organizational contexts.| Date of Award | 17 Oct 2025 |
