Abstract

This research aimed to understand how Lean Thinking methodologies can be adapted and applied to domestic food management in order to reduce food waste in Portuguese households. Food waste is considered a global problem with negative economic, social and environmental impacts. It is therefore necessary to study and implement solutions to reduce it. For a better analysis of consumer behavior, the quantitative method was used, through the application of a structured online questionnaire, covering a sample of 257 individuals from various regions of Portugal. The data was then analyzed using descriptive and statistical methods, such as the chi-square test, to validate the proposed hypotheses. The results showed that perception of the economic impact of food waste, regular checking of food available at home and more developed cooking skills are associated with the adoption of effective anti-waste practices. On the other hand, isolated factors such as meal planning and financial constraints are not absolute determinants in preventing waste. The importance of raising awareness of economic issues, developing culinary skills, and organizing purchases efficiently was highlighted. The Lean Thinking methodology proves to be an adaptable and essential tool for promoting more sustainable, efficient and economical food management in Portuguese families.
