Abstract

This internship report, carried out at Super Bock Group, has as its main objective the development of technical documentation for two distinct beer production units within the company: Browers Beato and the Pilot Plant of the R&D and Innovation Team, aiming to support quality control and assurance in these facilities. The report is structured into three main chapters. The first presents the motivation and objectives of the internship, the adopted working methodology, and a brief introduction to the units where the activities took place. The second chapter outlines theoretical concepts related to beer production and quality control and assurance. The third chapter provides a detailed description of all activities undertaken during the internship, highlighting their purpose and the knowledge acquired through their execution. The report concludes with a critical analysis and general conclusions. Complete versions of some of the documents developed are included in the appendices. Over the course of the internship, six technical manuals, seven work instructions, seven standard operating procedures, and one supplementary reference values document were developed. The knowledge required for the preparation of these documents was acquired through systematic observation of production processes, practical execution of certain tasks, and regular interaction with the responsible team, ensuring that the content produced is detailed and accurately reflects operational reality. Additional activities were also carried out in the areas of R&D and Innovation, Quality and Sensory Analysis, which further enriched the internship experience. Therefore, it is considered that the objectives defined at the beginning of the internship were successfully achieved, as the developed documentation significantly contributed to the standardization and completion of beer production processes, in the line with good practices and the company’s quality control and assurance requirements. From chapter three onwards, the content od the report is not available for public consultation due to confidentiality reasons, being accessible only to the academic institution for evaluation purposes related to the completion of the master’s degree.
