Abstract

This report describes the activities carried out under the six-month master's degree curricular internship, as part of the Nutrition team of a food retail company. The performed work depended on the company needs at the time. Throughout the internship period, seven projects and activities were carried out, such as: mapping of internal (company) and external (other brands) food products (more than 2000); Addition of more than 25 foods and their characteristics to the internal manual “Manual de comunicação de informações nutricionais”; Creation of a manual of six drinks, with fruits and vegetables, for consumption by store employees; Collaboration with the Sensory Analysis Team in the performance of internal sensory tests (more than 200 food and food products); promotion of a Food Education action; Participation in 11training and workshops. In addition to the activities mentioned, during the internship it was possible to create, implement and process data from a nutritional literacy questionnaire to company employees. The questionnaire includes 55 questions about food and constituents, food labelling, Nutritional Information Systems and some food myths. The company had the participation of 220 employees who presented, in general, a good level of nutritional knowledge. The accomplishment of the internship in the nutrition team of a retail food company promoted the knowledge in the area, allowing to observe and perform tasks of the nutritionist in the food market, showed the importance of being always informed and updated on new food trends and the adaptive capacity that the nutritionist needs to work with different multidisciplinary teams for the common good of the company.
