Abstract

The growing concern of consumers and companies regarding food quality and safety, and the amplification of legislation for the entire supply chain of raw materials, increase the sensitivity of companies in the sector to implement more effective controls in production processes and to adopt regulatory frameworks to improve quality management. It is required to the food industry produce high quality and low-cost products, meeting the applicable requirements and specifications, becoming essential to continuously manage and improve procedures and processes. Companies have chosen to implement global food safety and quality management systems, such as The International Featured Standard (IFS) Food. This standard is internationally recognized by wholesalers and retailers, applying to all those involved in the food chain, with the aim of ensuring the quality and safety of their food products. This dissertation results from the activities developed in the curricular internship, carried out in the premises of the company Mar Cabo - Produtos Congelados, Lda., specialized in the preparation of frozen fish. The main objective of this work was the optimization of its Food Safety and Quality Management System (FSQMS) and through the realization of an annual audit plan, which allows the survey of non-conformities, the monitoring of corrections made, the closure of non-conformities and the verification of the effectiveness of the corrective measures applied, respecting the requirements of the IFS Food version 7 reference. Thus, two diagnostic evaluations were performed, the first of which was divided into two moments of auditing. These first two audits aimed to survey the main deviations and non-conformities, to define a task plan and determine the follow-up of the work, contributing to the continuous improvement of the FSQMS. Throughout the internship it was possible to monitor the deviations and non-conformities raised, improve the Culture of Food Safety implemented and contribute to the development and improvement of some documentation. In the 1st and 2nd Audit, Mar Cabo – Produtos Congelados, Lda. had a score of 95.44%, and 16 deviations were identified, and in the 3rd audit it obtained 94.91%, with 20 deviations. Although it has contributed to the improvement of the FSQMS in documentary terms and in some aspects related to the maintenance of the facilities, it was not reflected in the evaluations. However, this work has no end and Mar Cabo – Produtos Congelados, Lda. will continue to bet on the optimization of its system.
