The present study aimed to explore the impact of probiotic consumption, in this case Kombucha, on heart rate and psychological well-being (anxiety, depression and stress). In addition, it also intended to evaluate the relationship between the consumption of probiotics and the environmental concerns of consumers. In this study participated 93 participants, aged between 18 and 38 years. Participants were tested before and after 30 days of Kombucha consumption. The results showed that there are no statistically significant differences between heart rate before and after Kombucha consumption. However, the results showed that there are statistically significant differences in the perception of psychological well-being before and after Kombucha consumption. With regard to the relationship between the consumption of probiotics and the environmental concerns of consumers, only a statistically significant association was verified between the consumption of probiotic yogurts and the level of concern about the social, ethical and environmental impact of the food industry. The present study contributed to increase knowledge about the consumption of probiotics and Kombucha and highlighted the importance of this topic for the promotion of general health and sustainability.
